It’s a process created at Guelph University to preserve unpasteurized honey for long trips by forcing its crystallization. Makes a terrific breakfast honey because of its “creamy” consistency that’s perfect to spread on toast!

Fresh walnuts and Rosewood’s 100% Unpasteurized Wildflower are combined to create a unique tasting experience. It’s delicious on its own, or used to top your favourite cheese (brie and blue cheese are fan favourites), salad, yogurt, or dessert.

For best results store in a dark dry place, such as a pantry or kitchen cabinet. Never refrigerate as it will speed up the crystallization process of the unpasteurized honey.

Honeycomb can be enjoyed as a treat completely on its own (we highly recommend it this way) or used to accompany cheese & charcuterie boards.

Much like wine, honey will vary in aroma, taste and colour from year-to-year reflecting characteristics of both the season and region.
