Butter Chicken

 

Cook up some authentic Indian flavour in your own kitchen.

Melt 30 mL (2 tbsp) butter over medium heat.
Add 454 g (1 lb.) diced chicken and stir-fry sauté 5 minutes.
Reduce heat, add sauce, and simmer 10 minutes or until cooked through. Serve over Basmati rice with Raita Sauce on the side.

Serves 3-4.

For the Raita Sauce:

  • 2 C Plain Yogurt
  • 1 Tomato, seeded & cored, finely diced.
  • 2 tsp. Green Onion, finely chopped.
  • 2 Tbsp. Red Onion, finely diced.
  • 4 Tbsp. Lemon Juice
  • 4 Tbsp. Cucumber, finely diced.
  • 9 Mint Leaves, sliced.
  • Salt & Pepper to taste

Directions:

Step 1
Combine ALL ingredients in a bowl, mix gently, season to taste with Salt & Pepper.

Step 2
Pour into a storage container and refrigerate.
