Butter Chicken & Rice with Raita Sauce
Butter Chicken is one of the most popular curries at any Indian restaurant, anywhere the world. We've made getting that aromatic, golden chicken simmered in an incredible, creamy curry sauce super easy with our authentic Indian flavoured Butter Chicken Sauce.
Raita Sauce is a creamy, cooling Indian yogurt-based condiment and our super easy Raita recipe makes a refreshingly saucy side dish with our Wildly Delicious Butter Chicken! It's best when made a couple of hours or a day in advance so that the flavours have time to blend.
This recipe serves 2 - 4.
For the Raita Sauce, you will need:
- 1 - 2 Cups Plain Yogurt
- 1 Tomato, seeded & cored, finely diced.
- 2 tsp. Green Onion, finely chopped.
- 2 Tbsp. Red Onion, finely diced.
- 4 Tbsp. Lemon Juice
- 4 Tbsp. Cucumber, finely diced.
- 9 Mint Leaves, sliced.
- Salt & Pepper to taste
Directions:
- Combine ALL the chopped ingredients in a bowl and toss gently. Add the plain yogurt in a 1/2 cup at a time, stirring after each 1/2 cup until you get your preferred consistency, season to taste with Salt & Pepper.
- Pour into a storage container and refrigerate. Raita sauce should be used within 4 days of making.
For the Butter Chicken, you will need:
- 2 Tbs Butter
- 1/2 kg Diced Chicken (either white or dark meat)
- 1 bottle WD Butter Chicken Cooking Sauce
- Rice of your choice on the side
Directions:
- Melt 30 mL (2 Tbsp) butter over medium heat.
- Add 454 g (1 lb.) diced chicken and stir-fry sauté 5 minutes.
- Reduce heat, add 1/2 - 1 bottle of our WD Butter Chicken Cooking Sauce
- Simmer 10 minutes or until cooked through.
- Serve over Basmati rice with Raita Sauce on the side.
