Quinoa Mango Salad
This is the perfect salad for summer and SO nutritious! You have the fantastic fiber from Quinoa, Iron rich Spinach, and the antioxidant power of mangos, plus ... it's simply delicious!
This recipe serves 2-3 people.
Ingredients for the Salad:
- 2 cups of cooked quinoa
- 1 cup sliced mango (1/2 mango)
- 2 cups of spinach (washed)
- 1/4 cup of cilantro leaves
Ingredients for the Dressing:
- 1/4 cup of WD Jamaican Mango & Habanero Everything Sauce #4
- 1/2 lemon juice
- 1 tbs of water
- 1 hand full of cilantro with stalk
- In a small bowl mix lemon juice, WD Mango & Habanero Everything Sauce and water. Finely chop the cilantro and add to the dressing. Let this sit to the side while you make the salad.
- In a shallow salad bowl add spinach, half of the mango slices, spread the quinoa on top and add the rest of the mango slices and the cilantro leaves.
- Drizzle the dressing and serve.
Notes:
- If cilantro isn't your thing, substitute with basil leaves.
- Add cooked Chicken or Ham for extra protein.
