Quinoa Mango Salad
SERVES: 2-3 people
Ingredients:
- 2 cups of cooked quinoa
- 1 cup sliced mango (1/2 mango)
- 2 cups of spinach
- 1/4 cup of cilantro leaves
- 1/2 Ripe habanero
Dressing:
- 1/4 cup of WD Mango Habanero sauce
- 1/2 lemon juice
- 1 tbs of water
- 1 hand full of cilantro with stalk
Directions:
Step 1 – Make the dressing
In a small bowl mix lemon juice, WD Mango Habanero sauce and water. Finely chop the cilantro and add to the dressing. Let it sit in the fridge.
Step 2 – Prepare the habanero
Wearing gloves, cut the habanero in half, remove the seeds and make tiny slices, rinse and let it dry on top paper towel.
Step 3 – Assemble your salad
In a shallow salad bowl add spinach, half of the mango slices, spread the quinoa on top and add the rest of the mango slices and the cilantro leaves.
Add drizzles of the dressing and garnish with the habanero slices.
Serve with the extra dressing on the side.
Note:
You can replace cilantro with basil leaves.
Serve smaller portions as an appetiser or as a quick main salad with grilled chicken breast or tofu to keep it vegetarian.
