Greek Souvlaki Chicken Pizza
This Pizza has such a light, warm, sunny flavour that it is as perfect a cure for winter blues as it is for soaking up the last rays of a summer evening with friends.
No only is it delish, it's super easy, looks stunning, and is a definite crowd pleaser!
INGREDIENTS
- 200g pizza dough (house made or store bought)
- 2 tbs of olive oil
- 1-2 yellow potato thinly sliced potato (soaked in cold water)
- ½ cup of WD Souvlaki Marinade
- 1 chicken breast (Fresh or left over chicken from your souvlaki skewer platter)
- ½ green pepper diced
- ¼ Red Onion sliced
- Sliced kalamata olives
- 1 lemon juiced
- 1 cup of feta cheese
- 1 TBS of fresh oregano
DIRECTIONS
Preparing your souvlaki chicken: If using fresh, cut your chicken into thick slices or cubes, around 1 inch. Toss the chicken with the souvlaki sauce and let it marinate for at least 30 minutes. Set a fry pan on a medium high heat and grill your chicken for 10 to 15 minutes flipping it to cook evenly. Shred your chicken into large chunks and set aside.
If using left-over (cooked) chicken, break it apart and set aside.
Preparing your pizza: Preheat oven to 450F degrees. If you’re using a pizza stone, place it in oven for at least 30 minutes.
1 - Drain the potatoes water and add some lemon juice to the bowl. In another bowl toss together chicken, green peppers, red onion olives and souvlaki sauce. Set aside.
2 - Spread and shape pizza crust into a 10 inch round on a floured counter top. Move your pizza to your pizza stone or pan. Baste your dough with olive oil or Souvlaki Sauce.
3 - Make a layer of potatoes slices over your crust, season with a bit of salt and pepper if desired then spread the other toppings from the bowl on top of the potatoes.
4 - Sprinkle the crumbled Feta on top of that and bake in preheated oven for 12 - 15 minutes or until crust is golden. Remove pizza from oven top with fresh chopped oregano.
